My contribution is barbecue chicken nachos, a wonderful creation we discovered when we lived in Memphis. Now, if you’re from the South, you’re probably wondering why anyone needs a recipe for bbq chicken nachos, seeing as you can get them everywhere – at restaurants, games, etc. And if you’re not from the South, you might be thinking “who puts barbecue chicken on nachos?”
Well, people in Memphis put barbecue chicken (or pork) on just about anything. And bbq chicken nachos are absolutely delicious. We fell in love with this stuff after we tried them at Corky’s, one of Memphis’ famous barbecue joints. I’ve made these simple nachos for many a Westerner and Northerner since, and everyone has loved them.
They’re easy to put together: just cook your meat (chicken or pork both work great) in the slow cooker all day until it’s nice and tender. Spread tortilla chips out on a cookie sheet, top with plenty of cheese and pop it under the broiler for a minute until it’s melty. Then pour on the meat and anything else that tickles your fancy: onions, olives, tomatoes, sour cream, jalapeños, cilantro, and dig in. I top it all off with a sprinkle of Corky’s dry bbq rub, but you can use paprika if you didn’t happen to stockpile Corky’s products before you moved away from Memphis. Or if you never lived in Memphis at all.

NOTE: I like to melt the cheese on the chips first, then top with the meat and toppings because everything holds together a bit better that way, but you’re certainly welcome to spread the meat on the chips, then top with cheese, and then broil it.
