Today I’m sharing one of my family’s favorite simple dinner recipes: saucy chicken tacos. It’s an easy recipe that uses pantry ingredients and comes together in under 30 minutes, which makes it a winner in my book. It uses the same sorts of ingredients you’re used to in chicken tacos: tomatoes, sour cream, cheese, etc., but instead of throwing those things on top of the chicken you melt them all together, creating a creamy delicious sauce that makes these tacos into something special.

The sauce is slightly spicy and creamy at the same time, while the sliced chicken breast is cooked quickly on the stovetop, so it stays tender and moist.

I’ve made the recipe a number of times, but this time I used Tyson® Fresh Chicken, which made the prep even easier than normal. Fresh chicken is super convenient: no time spent trying to defrost frozen chicken in the microwave without accidentally cooking it and turning it to rubber (ew). The less time I spend preparing dinner, the more time I can spend enjoying it with my family. With Tyson Fresh Chicken all I needed to do was pull it out of the fridge, slice it up, and start cooking! To make easy saucy chicken tacos, gather the following ingredients: (printable recipe card at the end of the post)

  Start with 1.5 to 2 pounds of boneless skinless chicken breasts and slice them into strips. Heat one teaspoon of oil in a large nonstick skillet and add the chicken (as shown below).

Cook and stir over medium-hi heat for about 5 minutes, until chicken is white (or very lightly brown) on the outside. Drain a can of Rotel tomatoes and green chiles (use mild if desired) and add them to the skillet. Turn the heat up to high and cook and stir 5-7 more minutes until chicken is cooked through. (Note: Chicken must be cooked to an internal temperature of 170 degrees for boneless products and 180 degrees for bone in chicken products.)

Drain any liquid from the skillet, and turn the heat to low. Add sour cream, taco seasoning, and grated cheddar cheese and stir until smooth.

Serve the chicken on corn or flour tortillas and garnish with chopped cilantro, lime, and lettuce (add additional cheese and sour cream if desired).

    hmmmm, so many good chicken recipes, but I think my favorite is chicken “fajitas” done in my covered baker in the microwave! Just toss sliced onion, peppers, chicken and fajita seasoning in the baker, pop in the micro for 15 minutes and VIOLA! Done! Top with sour cream pico de gallo. YUMMY!

    We make one called Italian chicken. In the crock pot. We use chicken breasts/tenders, cream of chicken, and either Italian seasoning or an Italian dressing packet. I like mine with more season to it so I use the dressing packet. Cook in the crock pot, serve over rice or mashed potatoes.

    This looks delicious! I will be trying this on Thursday for our make-up “Taco Tuesday”. However I will be using free range chicken breast that I purchased from a local family farm, not from a billion dollar corporation who abuses animals, adds tons of growth hormones and unneeded antibiotics to its “product”, mistreats their workers, and is putting the local family farmer out of business. I would encourage you to look into who you are doing business with.

    Sooo hard to pick one! But I chose my favorite “hands off” recipe. Preheat oven to 450 degrees F; Oil the inside & lid of a 2 qt Dutch oven (or heavy pot with tight lid); Add 1 C uncooked penne pasta to the pot & toss pasta with 2 tsp olive oil; spread 1 undrained (15oz) can diced Italian stewed tomatoes over pasta; roll chunks of chicken (about 1 lb.) in 1 TB each paprika & thyme leaves & place over tomatoes; top with even layer of 1 sliced red bell pepper and 1/2 an onion; final layer 1 can black olives drained; I pour a bit of the olive juice 1/4C or so into the pot. Bake tightly covered 35-40 minutes (do not lift lid while baking). It is done when aroma fills the house. I often prep this in the morning & refrigerate until dinner time. However, I never place the cold pot in a hot oven (it can crack a Dutch oven); I place the pot in the cold oven and then turn the oven on. Once the oven is preheated, start timing 35-40 min. Stir to mix just before serving.

    We love chicken here and can honestly eat it 4 times a week and be totally ok with that. Our favorites really depend on the season, but I guess if I had to choose one…. A nice crusty homemade chicken pot pie
