Doritos Enchilada Casserole

This Doritos Enchilada Casserole only takes about 10 minutes to put together, making it a perfect busy weeknight dinner idea. It's cheesy and creamy like your favorite chicken enchiladas, but you use Doritos instead of tortillas for a delicious twist.

Ingredients

  • 3 cups Cooked Chicken cubed or shredded
  • 10 oz Can Condensed Cream of Chicken Soup
  • 8 oz Sour Cream
  • 4 oz Chopped Green Chiles
  • 3 Green onions chopped, reserve some for sprinkling on top
  • 1/4 cup Milk optional
  • 8 oz Shredded Cheddar Cheese
  • 6 oz Nacho Cheese Doritos about 2/3 of a standard size bag

Instructions

  • Preheat the oven to 375 degrees F.
  • In a large bowl, stir together the chicken, cream of chicken soup, sour cream, green chiles, chopped green onions, and milk if using until combined (reserve some of the green onions for sprinkling on top of the casserole).
  • Spray a 9x9 or 11x7 casserole dish with nonstick spray. Gently crush the Doritos into smaller pieces, and spread half of them in the casserole dish. Spoon half of the chicken mixture over the Doritos, and the top with half of the cheese. Repeat the layers with the remaining Doritos, chicken mixture, and cheese.
  • Top casserole with remaining green onions and a few more crushed Doritos. Cover tightly with foil and bake for 30-40 minutes, until hot and bubbly.
  • Let stand 5-10 minutes before slicing and serving.
