Instant Oatmeal Pancakes

Blend instant oatmeal packets with a few simple ingredients for delicious oat pancakes everyone will love.

Ingredients

  • 1/4 cup Milk
  • 1 teaspoon Vinegar or Lemon Juice
  • 2 Instant Oatmeal Packets 1.5 oz packets
  • 1 Egg
  • 1 teaspoon Baking Powder

Instructions

  • Place on teaspoon vinegar or lemon juice in a quarter cup measuring cup, then fill the measuring cup up with milk. Gently stir and allow it to sit for about five minutes. It will get clumpy looking, that's just fine - you are making buttermilk here. Meanwhile preheat a griddle to about 300 degrees F or preheat a skillet or pan over medium heat.
  • Place the buttermilk, egg, oatmeal packets and baking powder into a blender and process until smooth (or use a food processor). If mixture seems thin, let it sit about 5 minutes and it will thicken up.
  • Pour out four pancakes (about 4 inches each) onto a griddle and cook until bubbles form and pop and the underside seems done, about 2-3 minutes. Flip the pancake and cook for 2-3 more minutes until cooked through.

Notes

Because of the oats in these pancakes, they will look darker than traditional pancakes. That doesn't mean they are burned, they just have more color. You can cook them a little longer over medium low heat if you want them more golden brown in color.
The consistency of your pancake batter may vary a little depending on what flavor and brand of oats you use. If the batter seems thin, let it rest for a bit to thicken up. If it seems thick, stir in a little more milk, just a teaspoon at a time. Our favorite flavor is apple cinnamon.
This recipe makes 4 small pancakes, which could be one serving or two smaller ones. Each pancake is roughly 100 calories, which is similar to a traditional pancake, but they are more filling because each pancake has 2 grams of fiber and 4 grams of protein. The recipe can easily be doubled, tripled, or quadrupled. Once cool, leftover oatmeal pancakes can be frozen and then reheated in a toaster or toaster oven, or even the microwave.
