In a bowl, stir the flour, salt, yeast, and brown sugar until combined.
Add water and stir again until combined.
Cover with plastic wrap and set at room temperature for anywhere between 8 and 24 hours.
90 minutes before you'd like to serve the bread, turn the dough out onto a well floured surface and pull up edges to form a ball. Let it rest for 30 minutes.
In the meantime, place an oven safe baking dish with high sides in the oven and preheat to 450.
At the end of 30 minutes, remove baking dish from the oven and lightly grease with nonstick spray.
Slash an "X" on top of bread, carefully pick up and drop into baking dish.
Cover with lid or foil and bake for 35 minutes; uncover and bake 5-10 minutes more until quite golden brown.
Cool at least 15 minutes before slicing.
