Peanut Butter Eyeballs

Peanut butter eyeballs are an easy, fun Halloween treat

Ingredients

  • 1/2 cup Creamy Peanut butter
  • 1/4 cup Melted Butter
  • 1.5 cups Powdered Sugar
  • 8 oz Chocolate melted
  • 25 Candy Eyes

Instructions

  • Combine the melted butter, peanut butter, and powdered sugar in a bowl. Mix to combine completely (it's easiest to use your hands). Dough will be a stiff play-dough like consistency.
  • Line a cookie sheet with parchment paper.
  • Scoop out peanut butter dough by scant tablespoons. Roll each scoop into a ball and place on lined cookie sheet.
  • Chill peanut butter balls about 15 minutes.
  • Meanwhile, melt the chocolate. Place it in a microwave safe bowl and melt in 30 second intervals, stirring thoroughly after each time in the microwave.
  • When peanut butter balls feel firm and chocolate is melted, pour the chocolate into a small cup or jar. Use a toothpick to dip a peanut butter ball into the chocolate. Do not submerge completely; leave a circle on the top of the peanut butter ball uncovered with chocolate.
  • Place coated peanut butter ball back on the lined cookie sheet to set up. Repeat with all peanut butter balls.
  • Place a dot of melted chocolate on the back of a candy eyeball, and place it on top of each peanut butter ball.
  • Allow to set up completely, either at room temperature or in the fridge.

Notes

You may use whatever type of chocolate you would like to dip the peanut butter balls in. Almond bark or candy coating will give a shiny, hard coating, but it doesn't taste as good as real chocolate. However, using real chocolate or chocolate chips may not result in as smooth and shiny of a finish. I used half milk chocolate flavored almond bark and half semi sweet chocolate chips as a compromise and it worked out well.
