Butterscotch Oatmeal Spice Cookies

These butterscotch oatmeal spice cookies start with a cake mix so they're super easy to make, and they taste delicious!

Ingredients

  • 1 15 oz Spice Cake Mix
  • 1 cup Rolled Oats
  • 2 eggs
  • 1/2 cup butter melted
  • 2 tablespoons water
  • 1 cup Butterscotch chips
  • 1/2 cup Semi Sweet chocolate chips

Instructions

  • Preheat oven to 350 degrees.
  • Stir together the cake mix and oats in a large bowl.
  • Add the melted butter, eggs, and water and stir until just combined.
  • Add the butterscotch and chocolate chips.
  • Allow dough to rest for 5-10 minutes.
  • Scoop dough onto lightly greased cookie sheet by rounded tablespoons. (I use a 1.5 tablespoon cookie dough scoop and scrape it level.)
  • Bake about 10 minutes until side are set and tops are slightly cracked. Cool for a few minutes on the cookie sheet, then remove to a cooling rack to cool completely.

Notes

You can use any combination of chips you'd like here, using a total of 1.5 cups. You can also save out about 1/4 cup of chips and place them on top of the cookie dough balls just before baking.
