Swedish Apple Pie

Swedish apple pie is like traditional apple pie, but faster, easier, and tastier! Instead of pie crust it has a cookie like topping that's absolutely amazing.

Cuisine: Pie
Keyword: Apple
Servings: 8

Ingredients

Filling

  • 1.5 pounds Apples
  • 1 tablespoon Sugar
  • 1.5 teaspoons Cinnamon

Crust

  • 1 cup All Purpose Flour
  • 1 cup Granulated Sugar
  • 1 Egg
  • 12 tablespoons Butter

Instructions

  • Preheat the oven to 350 degrees.
  • Peel, core, and slice the apples into thin slices. Toss with cinnamon and sugar and then place in a pie dish.
  • Melt the butter. Combine it with the flour, sugar, and egg and whisk together until well combined.
  • Pour dough over apples and smooth top.
  • Bake for 55-70 minutes until quite golden brown. Make sure the crust in the center of the pie is golden brown and feels cooked through and flakey. Edges may get more than golden brown; that's just fine.
  • Remove pie from oven and cool completely before slicing and serving, at least 4 hours.

Notes

Different types of pie pans may cook faster or slower. In a metal pie tin, this pie may only need 55 minutes. In a ceramic pie plate, my pie took 70 full minutes. Make sure the entire top of the pie is a deep golden brown before removing it from the oven. A little extra time is better than not long enough for this recipe.
If you'd like to be able to slice this pie and serve in wedges, you need to let it cool *completely* first. You can rewarm slices in the microwave for about 30 seconds if you'd like. If you do not want to wait for it to cool all the way, you can spoon it into dishes and serve it like a cobbler instead.
This pie tastes best on the first day because the crust looses a little of it's crunch, but leftovers are great the next day as well. Store it covered at room temperature or in the fridge.
