Preheat the oven to 350 degrees.
Pour the cake mix in a bowl. Stir in the eggs, melted butter and peanut butter until dough forms and is well combined.
Scoop approximately 1.5 tablespoons of dough (standard size cookie scoop) and roll it into a ball. Roll it in granulated sugar and place on a lined cookie sheet. Flatten dough balls slightly.
Bake for about 10 minutes until edges just feel set and tops are cracked. Remove from oven.
As soon as you pull the tray of cookies out of the oven you’ll add the eyes. Hold one red candy melt at a bit of an angle and push it into the first cookie, then push down the other side and wiggle it a bit. You want the red candy melt to sit just under the top of the cookie. Repeat with all the cookies on the tray.
Then go back to the first cookie and add a white candy melt. Again, hold it at an angle and push it into the (now melty) red candy. Then push down the other side and wiggle it back and forth a bit so the red candy comes up over the edges of the white candy.
Place tray of cookies back in the warm oven for 90 seconds to make sure the white candy gets melty. Then place a chocolate chip, flat side up, in the center of each cookie to complete the eyeball.
Continue with the next tray of cookies. Allow cookies to cook completely before serving.
