Halloween Eyeball Cookies

Ingredients

  • Yellow Cake Mix 15.25 oz
  • 2 Eggs
  • 1/4 cup Melted Butter
  • 1 cup Creamy Peanut Butter
  • 1/4 cup Sugar
  • 24 White Candy Melts
  • 24 Red Candy Melts
  • 24 Chocolate chips

Instructions

  • Preheat the oven to 350 degrees.
  • Pour the cake mix in a bowl. Stir in the eggs, melted butter and peanut butter until dough forms and is well combined.
  • Scoop approximately 1.5 tablespoons of dough (standard size cookie scoop) and roll it into a ball. Roll it in granulated sugar and place on a lined cookie sheet. Flatten dough balls slightly.

  • Bake for about 10 minutes until edges just feel set and tops are cracked. Remove from oven.

  • As soon as you pull the tray of cookies out of the oven you’ll add the eyes. Hold one red candy melt at a bit of an angle and push it into the first cookie, then push down the other side and wiggle it a bit. You want the red candy melt to sit just under the top of the cookie. Repeat with all the cookies on the tray.

  • Then go back to the first cookie and add a white candy melt. Again, hold it at an angle and push it into the (now melty) red candy. Then push down the other side and wiggle it back and forth a bit so the red candy comes up over the edges of the white candy.

  • Place tray of cookies back in the warm oven for 90 seconds to make sure the white candy gets melty. Then place a chocolate chip, flat side up, in the center of each cookie to complete the eyeball.
  • Continue with the next tray of cookies. Allow cookies to cook completely before serving.
