In today’s post: This easy dessert takes just like Winger’s Asphalt Pie but better! We’ve added extra Oreos and fudge to the ice cream filling plus a (not-so) secret ingredient that keeps it soft enough to eat, even right out of the freezer. It only takes five ingredients and fifteen minutes to make this delicious frozen treat!
Asphalt Pie, also known as grasshopper ice cream pie, is a simple summer treat: an Oreo crust gets stuffed with mint ice cream, then topped with hot fudge and caramel. It’s quick, easy, and delicious. But we can always make a classic even more delicious, right? Here’s what we’re going to do
- We’ll add Oreos into the ice cream filling so you get more Oreo goodness
- We’ll stir extra fudge right into the pie so you don’t even need toppings
- We’ll stir cool whip or whipped topping into the ice cream to keep it creamy and soft enough to eat, even right out of the freezer
Soft Enough to Eat!
The worst thing about ice cream desserts is that they come out of the freezer rock solid. So then you have to let them sit for a while to be able to slice and eat easily. If you stir a bit of whipped topping into the ice cream, it ensures the pie stays creamy and soft enough to slice without spraining your wrist. Plus that means you can dig in right away, not waiting!
Asphalt Pie Ingredients
This is an easy recipe that anyone can make – even kids! It’s customizable as well – use different ice creams and different cookie mix-ins to make an ice cream pie in any flavor you like. Here’s what you’ll need:
- An Oreo pie crust. You are welcome to make your own, but I use a premade crust from the store to keep this recipe super simple
- A pint of mint chip ice cream.
- Whipped topping – you’ll use half of an 8 oz tub.
- Oreos – you’ll break 5-6 Oreos and stir them into the ice cream mixture. Slice four more in half to top each piece of pie with if desired.
- Hot Fudge – you’ll use half of a 12 oz jar of hot fudge

Ingredients
- 1 6 oz Oreo Pie Crust
- 1 pint Mint Chip Ice Cream
- 4 oz Frozen Whipped Topping, thawed half of an 8 oz tub
- 10 Oreo Cookies
- 1/2 cup Hot Fudge about half of a 12 oz jar

Instructions
- Place the hot fudge in a bowl and microwave until stirrable, about 30 seconds. You don't want it hot, just warm enough that you can stir it. Set aside to cool while you make the rest of the pie.
- Gently soften the ice cream using the soften setting on your microwave for 15-30 seconds. Or set it out on the counter until soft.
- Place the ice cream in a medium bowl. Fold in the whipped topping (half of an 8 oz tub, thawed). Continue to fold until incorporated. Chop or crumble 5 Oreo cookies and stir them into the ice cream mixture.
- Pour the ice cream into the Oreo crust and smooth out. Spoon the hot fudge over the ice cream and use a toothpick or knife to swirl it around.
- Immediately cover the pie and place in the fridge for at least 4 hours or until firm.
- When serving, top with additional whipped topping and Oreos if desired. Caramel can be drizzled over top as well.

The instructions say to “place in the fridge for at least 4 hours or until firm.” Is that meant to be freezer? It looks so delicious!

The instructions should be that you put the finished pie in the freezer, not “fridge” as indicated. It will not set up at all in the fridge.
1-2 hours in the freezer is adequate.
