In today’s post: Buffalo Chicken Crescent Rollups are super easy to make with just a few ingredients and everyone loves them! This is an easy holiday appetizer you can have ready in just over half an hour.
Easy Appetizer or Dinner Idea
These easy rollups are a favorite holiday appetizer at my house! They come together quickly, bake up nicely, and are generally a crowd pleaser – there’s just enough buffalo flavor for a pleasant kick, but even those of us who avoid spicy foods don’t consider these too spicy. And since they’re filled with chicken and cheese they can even be a stand alone dinner on days when time is short – just add a green salad and you’re good!
Ingredients
It only takes a few ingredients to make these delicious rollups!
- Pillsbury Crescent Rolls (8 oz): This is the tube of Crescent roll dough that you’ll find in the refrigerated section of the grocery store. If you can find a Crescent Sheet grab that! It’s crescent roll dough that has not been cut into triangles, so it makes this easy recipe even simpler. But don’t worry, the normal crescent rolls work fine too.
- Shredded Chicken: This recipe is perfect for leftover chicken or chicken pulled off a rotisserie chicken!
- Buffalo Sauce: I used a sauce labeled “Medium Wing Sauce.” Don’t get a sauce labeled “hot” unless your family loves their food spicy!
- Cream Cheese
- Mozzarella Cheese
- Ranch Seasoning: I use a tablespoon of dry ranch dressing mix – this is optional so you can totally leave it out, but it does boost the flavor a bit so I like to include it.
- Ranch or Bleu Cheese Dressing for dipping
Mix up the Filling
This recipe is super easy! First, place all the filling ingredients into a medium bowl and mix together thoroughly. I find using a hand mixer is easiest here.
Make the Rolls
Then lightly flour a surface and unroll the Crescents or the Crescent Sheet and gently pat into a rectangle shape. If you are using crescents, do not separate them! Instead, gently press together the perforations to make one flat sheet of dough. Drop the filling by spoonfuls over the crescent dough, then spread it out into an even layer as shown below. Go all the way to the edge on 3 sides, but leave an inch of dough on one long side.
Then roll up the dough starting from the long side that has filling all the way to it. Roll it all the way up into a log and then pinch the seam closed.
Slice and Bake
Now use a sharp knife to slice the log into 12 even pieces and place each slice on a lined cookie sheet. I like to use a flat spatula to flatten the slices a little bit.
You’ll bake the buffalo chicken rollups for about 20 minutes until they are nicely golden brown. Make sure they have quite a bit of color on them before taking them out of the oven to ensure they are baked all the way through. You can serve immediately, or they also taste great when they’ve cooled to room temperature. Just be sure to store them in the fridge.
Buffalo Chicken Crescent Rollups
Ingredients
- 8 oz Pillsbury Crescents or Pillsbury Crescent Sheet
Filling
- 1 cup Cooked Shredded Chicken 1 large breast
- 4 oz Cream Cheese softened
- 1/2 cup Mozzarella Cheese
- 1/4 cup Buffalo Wing Sauce
- 1 tablespoon Dry Ranch Dressing Mix
For Serving
- Ranch or Bleu Cheese Dressing For Dipping

Instructions
- Preheat oven to 375 degrees.
- In a bowl, mix the chicken, cream cheese, mozzarella cheese, ranch seasoning mix, and wing sauce.
- Open the tube of crescents and unroll the dough but do not separate into individual triangles. Shape the dough into a rectangle, gently pressing the perforations together. (If using a crescent sheet, just unroll it and gently press into a rectangle.)
- Spoon the filling onto the crescent dough then spread out into an even layer. Spread all the way to 3 edges, leaving about an inch of space along one long edge.
- Roll the rectangle from the other long edge into a long. Use a sharp knife to cut 12 even slices and place them on a lined baking sheet. (If you don't have parchment paper place them directly on the baking sheet without greasing.)
- Bake about 20 minutes until golden brown.
- Serve immediately with ranch or bleu cheese dressing for dipping. These can also be served at room temperature, but they should be stored in the fridge.
