In today’s post: This easy pumpkin cake is soft, moist, and spiced to perfection. Because it starts with a cake mix and only takes four ingredients you can have it ready to go into the oven in under five minutes! Top it with cream cheese frosting for a fall dessert you’ll make over and over again.
I gotta say, I was surprised at quite how delicious this easy pumpkin cake turned out. It’s soft and moist without being heavy or stodgy, it has a beautiful pumpkin spice flavor, and the sweet cream cheese frosting compliments the cake perfectly! And even better: it could not be easier to make. Seriously, this is the easiest (and BEST) pumpkin cake I’ve ever made.
The hardest part about this cake was waiting for it to cool so I could frost it! I topped it with my favorite homemade cream cheese frosting recipe, which is mildly sweet, not overly tangy like some cream cheese frostings can be. In a pinch you could use canned cream cream frosting, but this homemade recipe mixes up in five minutes and makes a generous amount. It’s delish!
Ingredients
Here’s what you need to make this easy, four ingredient pumpkin spice cake:
- Spice Cake Mix: I know some people prefer making cakes from scratch, but I love cake mixes! They’re super convenient: no need to measure out flour and sugar or mix wet ingredients and dry ingredients separately, etc. Plus cakes made from a mix have a beautiful soft texture.
- Canned Pumpkin: You’ll be using canned pumpkin, aka pumpkin puree. Be sure not to accidentally purchase pumpkin pie filling, which is different. The pumpkin mixes with the spice cake mix to give you a beautiful flavor AND it helps the cake stay ultra moist WITHOUT any vegetable oil!
- Eggs: Three large eggs help lighten the cake.
- Water: I add a quarter cup of water to loosen up the cake batter, which is very thick otherwise.
What if I can’t find a spice cake mix?
Most large grocery stores carry spice cake mixes during the fall and holiday season, but they may not sell them at other times of year. If you cannot find a spice cake mix, use a yellow cake mix and whisk 2 teaspoons pumpkin pie spice into the mix before adding the other ingredients. If you don’t have pumpkin pie spice, use one teaspoon cinnamon, half a teaspoon nutmeg, and a quarter teaspoon each cloves and ginger.
Easy Pumpkin Cake

- Boxed Spice Cake Mix 15.25 oz
- 1 can Pumpkin Puree 15 oz
- 3 Eggs
- 1/4 cup Water
Cream Cheese Frosting
- 6 tablespoons Cream Cheese softened
- 6 tablespoons Butter softened
- 2 teaspoons Vanilla Extract
- pinch Salt
- 4.5 cups Powdered Sugar
- 1-2 tablespoons Milk

Instructions
- Preheat the oven to 350 degrees F. Lightly great the bottom only of a 9×13 baking dish.
- In a large bowl, beat together the cake mix, pumpkin puree, eggs, and water on low speed about 30 seconds until combined. Beat on medium speed for 2 minutes.
- Pour into prepared baking pan and bake for approximately 30 minutes until top springs back when touched and toothpick comes out completely clean. Do not underbake; the pumpkin keeps this cake very moist so a few minutes over is better than under.
- Allow cake to cool completely before frosting.
- To make frosting: beat together the softened cream cheese and butter until smooth. Beat in the vanilla and salt. Gradually beat in the powdered sugar, adding 1-2 tablespoons milk as needed so you can incorporate all the sugar.
- Frost cake and serve. Store leftovers covered at room temperature.
