Easy Halloween Treat
If you need a cute, easy treat for Halloween parties or get togethers, look no further than these cute ghost brownies. They start with purchased brownie bites, making this an easy no bake treat! Of course, you could make your own brownies from scratch or using a boxed brownie mix if you prefer. Either way these are fairly quick to put together and turn out adorable – a nice alternative to Halloween cookies.
Ingredients
Here’s what you’ll use to make brownie bite ghosts:
- Brownie Bites: You can find these in most grocery store bakeries – I really like the brownie bites from Costco.
- Marshmallows: You want the standard size marshmallows, not mini or extra large marshmallows.
- White Candy Melting Wafers: I like the Ghirardelli brand of white melting wafers because they melt really well, cover nicely, and set up super fast in the fridge. A 10 oz bag of melting wafers will be enough for 12-16 brownie bite ghosts. The melting wafers are a bit expensive, so if you want to make a lot of ghosts you could use Almond Bark instead. If you choose to use white chocolate chips or real melted white chocolate you’ll likely have to add shortening, vegetable oil, or coconut oil to get a runny consistency.
- Black Decorating Gel or Semi Sweet Chocolate Chips: You can find small tubes of decorating gel near the cake decorating supplies at most grocery stores. You’ll use this to make eyes and mouths for your ghosts. Decorating gel is very easy to work with so that’s why I use it, but be aware it doesn’t set up completely hard. If you don’t want to buy a tube of black gel, you could use melted semi sweet chocolate chips instead, which will set up hard.
How to Make Brownie Bite Ghosts
Ok, this is easy and fun! To begin, line a cutting board or cookie sheet with parchment paper, then set twelve brownie bites out on the parchment paper. Open the bag of marshmallows and keep them easily accessible.
Melt the Candy Coating
Pour about half of the bag of melting wafers into a small ziplock bag. Microwave it for 30 seconds. Squish the bag; if the wafers are not melted yet microwave for 15-30 more seconds until completely melted.
Place Marshmallows on Brownie Bites
Next, snip a tiny corner off the bag so you can “pipe” the white candy out of it. Be aware that if you are using the Ghirardelli melting wafers, the candy is quite runny when it’s melted, so make sure to cut just a tiny corner off. Pipe a small amount of candy onto each brownie bite and then place a marshmallow on top.
Pipe Candy to Cover Ghosts
Now begin piping candy in a circular motion on top of the marshmallow. Keep piping in a circular motion. Once the entire top of the marshmallow is covered the candy will start to drip down the sides.
Continue piping until candy has covered at least halfway down the marshmallow. Then you can move on to the next brownie bite. The melted white candy will continue to drip down the sides of the marshmallow and onto the brownie bite as shown below. It’s ok if some of the candy drips down the sides of the brownie and onto the parchment paper. If the candy doesn’t completely cover the marshmallow that’s ok, but while it is still wet you can add more if desired.
Continue until you have covered all the ghosts, melting the other half of the candy wafers in a new bag when you need them. Then place the tray into the fridge until the candy sets up completely, which only takes about five minutes.
Add Eyes and Mouth
Once the candy coating is completely set up, remove the tray from the fridge. Now it’s time to add eyes and a mouth if desired. It’s very easy to do this with black decorating gel: just squeeze out a small dot for each eye and a larger dot for a mouth.
The gel will take a few hours to set up, so be careful not to touch it right away as it will smear. After a few hours it will harden enough that it won’t smear, but it won’t be completely hard. I like how easy the gel is to work with and how nice it looks, but if you don’t want to use it you can melt a few semi sweet chocolate chips in a bag, snip a tiny corner off the bag, and use that to pipe on eyes and a mouth.
Store the brownie bite ghosts at room temperature until ready to serve. The candy coating keeps the marshmallow fresh so they are fine out on the counter for a day or so. For longer storage keep in an airtight container.
Brownie Bite Ghosts
Ingredients
- 12 Brownie Bites
- 12 Marshmallows regular size
- 10 oz White Melting Wafers
- Black Decorating Gel

Instructions
- Place about half of the melting wafers in a small ziplock bag. Microwave 30 seconds and knead the bag a big. Microwave 15-30 more seconds until completely melted. Snip a tiny corner off the bag.
- Place 12 brownie bites on a parchment paper lined cookie sheet. Pipe a small amount of which candy out of the bag onto each brownie bite and top with a marshmallow.
- Next you'll pipe on enough candy coating to cover each marshmallow. Start by piping on the top of the marshmallow in a circular motion.
- Continue piping in a circular motion. The candy will begin to run down the sides of the marshmallow. Once candy is about halfway down the marshmallow, you can move on to the next one (the candy will continue to drip). Cover all the marshmallows, melting the rest of the candy wafers in a new bag when needed.
- Place the ghosts in the fridge to set up – this should only take about 5 minutes. Then use black decorating gel to add two dots for eyes and another dot for a mouth if desire.
- Store ghosts at room temperature. The candy coating keeps the marshmallow fresh so they are fine to sit out uncovered for about 24 hours. For longer storage, place in an airtight container.
